Green Pizza Recipe

Did you know one slice of most pan pizzas can be over 300 calories? Looking for a healthy alternative?

Here's what you'll need...

               Ingredients:
1 pound whole wheat pizza dough
2 cups chopped broccoli
1/4 cup water
6 cups arugula, chopped
Pinch of salt
Pinch of garlic
Freshly ground pepper to taste
1 cup shredded part-skim mozzarella cheese
1/2 cup whole wheat flour
1/2 cup prepared pesto
1 tsp olive oil

1. Preheat oven to 450°F. Coat a large baking sheet with olive oil.

2. Sprinkle flour onto a flat surface and roll out your dough to about the size of the baking sheet. Sprinkle with garlic.

3. Bake until puffed and lightly crisped on the bottom,  which takes about 8 minutes. Chop broccoli.

4. Meanwhile, cook broccoli and water in a large skillet over medium heat, covered, for about 3 minutes. Chop arugula stir it in and cook, stirring, until wilted, 1 to 2 minutes more. Season with salt and pepper.

5. Spread pesto evenly over the crust, top with the broccoli mixture and sprinkle with cheese. Bake until crispy and golden and the cheese is melted, 8 to 10 minutes.

I made this dish for the first time today in a pinch and I thought it was a perfect quick and healthy meal.. light but filling and not the least bit greasy.

Bon Appetit, or should I say, Buon Appetito!
