To-Die-For Banana Nut Muffins


What better activity is there to do when you're bored than bake? You get to create something, nom on it and share it with friends and family.




Banana is my absolute favorite favorite flavor - I always get weird looks when I tell people that. But what nobody can dispute is how awesome bananas taste in muffin form, especially when they have a moist consistency. No doubt it's one of the more popular flavors (blueberry being the favorite). Since I had a few overripe bananas lying around, I figured I'd make my -soon to be- world famous banana nut muffins!

Ingredients:
1/2 cup butter
1-1/2 cup sugar
2 eggs
4 overripe bananas
1 teaspoon vanilla
1/2 cup buttermilk (This is what makes it extra moist)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts

What to Do...
1. Preheat oven to 375 degrees.
2. Mush your bananas like crazy. After a while you can beat them with a handheld mixer until most of the big chunks are gone.
3. Cream butter and sugar until light.
4. Add the eggs and beat well. 
5. Stir in the mashed bananas and vanilla. 
6. Stir dry ingredients together.
7. Add buttermilk. If it's lumpy, put it in 1/2 cup hot water and beat it for a bit. Add the walnuts.
8. Fill each muffin tin about 1/2 full. Bake in greased or papered muffin tins for 20 minutes at 350 degrees. 


Want to add Banana Frosting?
1. Stir together 2 cups sifted powdered sugar, 1/3 cup butter, 3 Tablespoons of mashed bananas and 1 Tablespoon of lemon juice. Refrigerate. 

Notes:
Make sure you let the muffin cool for quite a while before icing them. Otherwise the ice will melt off the top of the muffin/cupcake.
I was running low on walnuts so I thought I'd experiment and use sliced almonds instead. Not recommended. It didn't ruin the texture, but almonds are slightly harder and made chewing the muffins harder than chewing a muffin should be. The rest of it was delicious!!
