Burgers are red? Who knew?! This meal may look out of the ordinary- I'll admit, I though it looked like a hemorrhaging flatbread at first- but its unique fruity taste is fantastic. You'll love it. So let's do this.
Ingredients:
3 tsp vegetable oil
1/2 medium onion, finely chopped
2 Tbsp brown sugar
2 cups strawberries, sliced
1/2 Tbsp balsamic vinegar
1/4 tsp freshly ground black pepper
1 medium carrot, peeled
1 medium zucchini, peeled
1 lb lean ground chicken breast
1/2 cup bread crumbs
2 tsp Worcestershire sauce
1 egg, lightly beaten
1/3 cup parsley, chopped
5 flatbreads or naan
1 cup baby spinach
What to do:
1. Warm 1 teaspoon vegetable oil in a skillet over medium heat. Add onion and saute until soft. Add the brown sugar and continue cooking for 2 minutes. Add strawberries, balsamic vinegar, and black pepper; cook for 1 minute.2. Once strawberries have been heated, use a large spoon to moosh them around. When the mixture becomes more saucy instead of chunky, remove it from heat.
3. Preheat a grill to medium. Shred carrot and zucchini, then chop into smaller pieces.
4. In a large bowl, lightly mix shredded vegetables, ground chicken, bread crumbs, Worcestershire sauce, egg, parsley, and a pinch salt and pepper. Form into 5 or 6 patties and brush with remaining vegetable oil.
5. Place burgers on grill and cook for 4 to 5 minutes per side. Meanwhile, toast bread for 1 to 2 minutes per side.
6. Line flatbreads with spinach, add burgers, and top with strawberry sauce, then fold bread over burgers.
For this recipe it is imperative that you have a grater. Because if you don't, you'll end up like me, who was stuck shredding the carrot and zucchini with a peeler and chopping them with a knife from there. Even then, the pieces are too thick and won't stick to the chicken and other ingredients. It will be difficult to form a burger. I carefully managed to make it work, but I wouldn't recommend it.
Why didn't I have a grater, you ask? It recently snapped off at the handle during a tragic mozzarella incident.
All difficulties aside, the burgers indeed taste as summery as they look. The sweetness of the strawberries adds a strong flavor to an otherwise bland poultry meal. Let's not forget, it's healthy too!
