Teriyaki Chicken Flatbread with Swiss Cheese and Pineapple

Yyyummmm. Here is my personal version of a Teriyaki Chicken Burger I used to order at a place called Red Robin (before I was a veggie). It had such a unique taste that I decided to recreate it. And guess what? It literally takes fifteen minutes to make. Whip out your George Foreman Grills!
Ingredients:
2 tbs minced garlic
3 oz low sodium soy sauce
1 tbsp ginger
1/4 tsp crushed red peppers
2 tbs cornstarch
1 can pineapple slices
6 oz water
4 chicken breast fillets
1 large tomato
4 slices swiss cheese
4 flatbreads

Note: The last time I was in a Chinese food restaurant I took a glance at the nutrition facts on the back of regular soy sauce (usually found with a red cap). The sodium level in just ONE TABLESPOON, a serving, was 950 mg of salt! Ridiculous! Unless you're planning on jacking up your blood pressure and being bloated until you're fifty five, I'd recommend the low sodium. 

1. In a small saucepan, combine garlic, low sodium soy sauce, and pineapple juice (from can) over medium heat. After two minutes, add the ginger and red peppers.

2. Stir together cornstarch and water in a bowl. Once cornstarch is dissolved, add it to the other ingredients in the saucepan. Cook until mixture thickens, but do not boil.

3. After teriyaki sauce is cooled, place it in a zip-lock back with chicken and refrigerate for 2 hours or so.

4. Remove the chicken from the bag, keeping the sauce, and start grilling chicken. Cook the chicken for 4 to 6 minutes per side or until it's done. Meanwhile, drizzle your pineapple slices (from can) with sauce. When you flip the chicken add the pineapple slices to the grill. The pineapple will take less time to cook -- about 3 or 4 minutes. You'll know the pineapple slices are done when they have some grill marks on each side.
5. About 1 minute before the chicken is done place 1 slice of Swiss cheese on top of the fillet to melt. (I didn't have Swiss, so I used Monterrey Jack and that worked pretty well.) As the chicken is grilling, slice toast the flatbreads.

6. Slice your tomato and place it on the flatbread. Then plop the chicken on top, followed by the pineapple.
